kongunadu Vellai Biryani

1/2 kg seeraka samba rice Wash and soak for 1 hr 1 kg mutton In mixe 20 shallots  12 garlic cloves  1 inch ginger  4 green chilli 1 tsp fennal  3 cardamon 1 piece cinnamon 4 cloves 1 tsp salt Grind well add little water and grind to a thick paste  Add ground masala to 1 kg mutton  2 tbl cur Mix well Marinate for 1/2 hr In cooker 2 tbl ghee 2 tbl gingelly oil 2 bay leaves 1 inch cinannamon 1 star anis 3 cardamon  3 piece kalpasi 2 Mcarathi mookku 1 javitri  5 cloves Saute  1 Sliced onion  Saute well  Add marinated mutton  Mix well Cook for 5 mins in high flame Add 1 handful of coriander and mint  Add 3 cup water Once water boil close the cooker 6 whistle in medium flame Switch off  Switch on keep medium flame Add rice  1 medium size lemon juice  Boil for 2 to 3 mins Switch to low flame Close the lid Cook for 5 mins in low flame Switch off Make dum for 10 mins Biryani ready

Watch YouTube vedio -  நாட்டுகோழி குழம்பு   Recepie : 2 tsp oil 12 small  onion 1 tsp cumin 1 tsp fennel 1/4 pepper 10 garlic gloves Saute well on low flame Keep aside Ground to a thick paste  1 1/2 inch ginner Coconut  Grind to a fine paste 3 tsp groundnut Oil  1 chopped tomoto 5 chopped small onion Saute wel Add 750g country chicken 1/2 tsp Termerric 1 tsp Salt  Saute well 1 1/2 tsp chilly powder 2 tsp coriander powder 1 tsp karam masala powder Add ground pastes Saute well Add little water as required for curry Mix well and check salt for taste Cook for 10 whistle  Switch off and keep aside On pan  2 tsp gingelly oil 1 bay leaf 1 patta 2 clove 1 kalpasana poo Few curry leaves 1 tsp mustard 1/2 tsp fennal Saute and pour it in cooked curry Naatukozhi kuzhambu ready to serve with idly Notes : Same procedure for mutton and chicken this same curry taste For mutton - cook for 6 whistle Fir chicken - cook for 3 whistle

Watch You Tube Video: Road Side Kaalaan In bowl 2 cup cabbage chopped (200g) 2 cup mushroom chopped (200g) Wash and filter 1 cup Maida or Wheat 1/4 cup corn flour 1 tsp kasmeriri chilli powder 1 tsp karam masala Required salt Mix well Make a thick dough Fry in hot oil in flat small piece Keep aside On pan 2 tsp oil 1 cup chopped onion (2 big onions) 1 tsp Ginger garlic paste 2 green chilli Few curry leaves Saute well 1 cup Tomoto puree(3 tomoto) 1/4 tsp turmerric powder 1/2 tsp Garam masala 1 tsp coriander powder  2 tsp chilly powder Required salt In bowl( 1 tsp corn flour+ 1 cup water) Mix well Add it to masala for thick consistency  Add fried pakoda Mix well Cook for 5 mins on low flame Onion and coriander for garnish
