kongunadu Vellai Biryani
1/2 kg seeraka samba rice
Wash and soak for 1 hr
1 kg mutton
In mixe
20 shallots
12 garlic cloves
1 inch ginger
4 green chilli
1 tsp fennal
3 cardamon
1 piece cinnamon
4 cloves
1 tsp salt
Grind well add little water and grind to a thick paste
Add ground masala to 1 kg mutton
2 tbl cur
Mix well
Marinate for 1/2 hr
In cooker
2 tbl ghee
2 tbl gingelly oil
2 bay leaves
1 inch cinannamon
1 star anis
3 cardamon
3 piece kalpasi
2 Mcarathi mookku
1 javitri
5 cloves
Saute
1 Sliced onion
Saute well
Add marinated mutton
Mix well
Cook for 5 mins in high flame
Add 1 handful of coriander and mint
Add 3 cup water
Once water boil close the cooker
6 whistle in medium flame
Switch off
Switch on keep medium flame
Add rice
1 medium size lemon juice
Boil for 2 to 3 mins
Switch to low flame
Close the lid
Cook for 5 mins in low flame
Switch off
Make dum for 10 mins
Biryani ready
